Camel Biryani.......recipe
Ingredients required for camel meat biriyani.

- Camel meat- Cleaned and cut into medium sized piece.
- Onion-3 numbers,chopped.
- Ginger and garlic-1 tablespoon crushed each.
- Green chillies-4 numbers slitted into two.
- Tomato-1 big sliced.
- Curry leaves-2 springs.
- Yogurt-1 tablespoon.
- Turmeric powder-1/4 teaspoon.
- Red chilli powder-1/4 tablespoon.
- Garam Masala powder-1 teaspoon.
- Salt-as needed.
- Oil as required.
Ingredients For Cooking Rice:
- Basmathi rice/Long grain rice-2 cups.
- Lemon juice-juice of 1 lemon.
- Fennel seeds-1/2 teaspoon.
- Cinnamon-2 inch piece.
- Clove-4 numbers.
- Cardamom-4 numbers.
- Bay leaf-2 numbers.
- Water as required for cooking rice.
- Salt as required.
Other Ingredients:
- Ghee-3 tablespoons.
- Badam/Almonds-10 numbers.
- Cashew nuts-15 numbers.
- Raisins-15 numbers.
- Onion-1 small thinly sliced.
- Coriander leaves-Finely chopped,3 tablespoon.
- Puthina leaves/Mint leaves-chopped.
Method of making camel meat biriyani:
Preparation of rice:
- Wash rice and soak them for 15 minutes.Drain it and keep it aside.
- Boil water in a large deep bottomed pan.Add in lemon juice,fennel seeds,cloves,cinnamon,cardamom,bay leaf into it.Put the soaked rice into it.
- Cover it and cook.(Water should be more than double of rice.)
- When rice 3/4 cooked turn off the flame and drain water.Keep aside.
Preparation of gravy:
- Heat oil in a pan,add in ginger garlic saute for 2 min,Add in onion saute for 3 min.Add in green chillies,curry leaves,tomato, Salute for few minutes.
- Add in all spice powders into it.Turn the flame to simmer.
- Add in curd(yoghurt) and saute well.Then slowly put camel meat to it.Cook meat in the masala.If water is required for cook meat add a little water into it.
Making topping for biriyani:
Dum process :
- Heat ghee in a pan fry almonds,cashewnuts and raisins .
- Then fry slice onion in the same pan by adding little oil to it.Keep this aside.
Dum process :
- In your biriyani pot add half of the masala gravy and just spread it..
- Next put half of rice and spread.. Put some ghee,fried cashews,almonds and raisins..
- Spread fried onions.Chopped coriander leaves ,mint leaves.
- Repeat this steps for one more time.Seal it with aluminium foil and put them into a lower flame above an another iron pan.
- Serve the biriyani as hot with onion salad and a good pickle.
